Extra Cheesy. The pizza, not me.


When Matt was gone weeks at a time recently, I wanted to welcome him home on Friday nights (when he was able to be there for dinner) in a special way but if there is one thing that Matt DOESN'T give up it is Friday Night Pizza Night.

(One time I changed the menu from pizza to calzone (they are all the same ingredients after all---I thought it was a safe move!) and get razzed about it to THIS DAY.)

Instead of doing something catastrophic like making something other than pizza on a Friday(!!!!), I decided to doctor UP our pizza.

By making STUFFED CRUST pizza.


Stretch the dough just a bit wider than usual. Rip string cheese sticks in half and lay around entire perimeter of the dough, then fold dough over the cheese and pinch to seal. Bake as usual.

It is a real treat!

Speaking of Pizza~~~~

Matt tends toward the traditional pepperoni or pepperoni & veggie combos and my favorite is garlic pizza with tomato, onion and basil (and feta on occasion!) Though BBQ pizza is a close second for us. Recently, I made a ranch pizza with chicken, broccoli and onion.

Nevertheless~I have been thinking it would be a fun challenge to see how many different kinds of pizza I can make and am in need of some suggestions.

SOOoooooo~give me some ideas! (pretty please)

Do you have a grill? We LOVE grilled pizzas.

Okay, topping suggestions:

Alfredo sauce, crumbled bacon, cooked sliced potatoes,
green onion, and cheddar mixed with mozzarella. Yum! Don't forget the salt and pepper on that one.

Or, how about a garlic/olive oil mixture brushed over the crust, crumbled goat cheese, onions, and black olives.

I'm getting hungry!

Doctored up pizza can be delicious and oh so fun!

One of my favorites is ranch dressing for sauce with chicken, fresh tomatoes, fresh basil, and of course mozzarella cheese with some parmesan if it's handy.

Another one that is great is BBQ sauce for sauce with chicken, cheese, & pineapple.

We like to grill ours as well.. and in the summer.. nothing better than homemade sauce, fresh tomatoes, garlic and basil out of the garden.. and home made mozzarella.. Lots of it!

We love a hot wing chicken pizza. I mix pizza sauce with the hot wing sauce so its not too hot for the kids. For the toppings I put chicken with hot wing sauce barely coating it, shredded carrots, blue cheese, green onions, and mozzarella cheese. We had this at a local restaurant and it has since been a family favorite.

We have done a shrimp alfredo pizza (YUM!) and our favorite to order is bacon and pineapple - but the BEST ever is the "spinacoli"
Fresh spinach/little bits of broccoli (trees as my kiddos call them)on a pizza with extra cheese (it's yummy to mix the cheeses too!)

Homemade pizza is THE favorite around our house! While the kiddos prefer to stick with pepperoni, my husband and I love sauteed spinach, purple onions, and diced chicken with alfredo sauce.
Another fave is pineapple chunks with pepperoni (eye roll).

Is it cheaper to make pizza than to buy from say, Costco?? Pizza is kind of our shopping day meal, but I've never tried homemade.
We're big Hawaiian fans here - ham and pineapple.
One that I had that was REALLY good though was bruschetta pizza - tomatoes, lots of garlic, red onions. . . lots of cheese, it was REALLY good.

We LOVE homemade pizza around here and it's usually on Friday nights as well! I CAN'T WAIT TO TRY THE STUFFED crust idea!! :) YUM-O! We are kinda boring with our toppings though. I am drooling at all the other ladies comments! :) We do a lot of "hmm, what's in the frig that we need to use up" type of pizza. I love BBQ sauce in place of the pizza sauce and then whatever toppings. I like putting cut up spinach on mine. Recently, I had some bacon bits and we threw those on...it was YUMMY!

Tonight was the first time I tried rabbit meat on our pizza. The rabbit meat had been prepared previously in a crock pot. I placed the meat in the crock pot, and covered the meat with water, which was seasoned with garlic, onion powder, and some celery seed, etc. It cooked slowly in the crock pot all day. The majority of the meat and broth will be used for some Rabbit Noodle Soup soon. As for the rabbit meat on the pizza, the meat had a similar taste to chicken. Add some herbs, fresh onion, sliced mushrooms, and cheese, and you have YUM!

I use whatever veggies are around. and we love chicken.

usually i do homemade red sauce.
ranch
homemade pesto (from last years garden)
garlic olive oil and rosemary

the most recent favorite was the ranch though!

oh and for a crust if any of you ladies have the kitchen aid mixer recipe book it has a great crust in it (i have not lost the book yet since we were only married a year and a half ago : ) oh and i spice up the crust with basil and or other yummy spices in the mixing phases!

I forgot my favorite cheap pizza trick!

DON"T BUY A PACKAGE OF PEPPERONI!!! Nope, go to the deli counter and get 1/4 lb. of SANDWICH pepperoni. when you go to decorate your pizzas, just cut the stack into quarters. I usually have enough for 4 pizzas, and it costs less than half of a package of little pepperoni that only covers 2 pizzas!

Garlic and tomato is my favorite, too!

Millie loves spinach pizza. Toss spinach with Romano, salt, pepper, lots and lots of freshly chopped & sauteed-in-butter garlic, and drizzles of homemade or store-bought Italian vinaigrette, to taste. Spread over the crust and top with mozzerella.

Our favorite of last summer was rosemary and cherry tomato pizza (a picture of the same languishes waiting to be put on buildabelly). Brush olive oil over crust, top with lots of halved cherry tomatoes and fresh rosemary sprigs, then sprinkle liberally with sea salt. Yum!

Well...I'm usually pretty quiet around here...but I had to post on our favorite pizza around here.

Zucchini pizza! Delicious...and yet another great way to use up all of that summer zucchini.

Crust...cover with thinly sliced zucchini, drizzle with olive oil. Cover with mozz. cheese and sprinkle parmesan. Add halved cherry tomatoes (optional), and then add minced garlic the last few minutes of cooking. Then I serve it with a homeade basil marinara sauce to dip in....YUM.

Alright...I must go make zucchini pizza now!! =D
