A Vegetable Before and After

I thought it would be fun to show you what I did with all the food I harvested last week.

Again, here was the harvest on Monday morning...


 And here are some of the things I did with them: 


I have to sort through/reorganize my canning cupboard before putting these things away.
yellow squash soup with cheddar beer bread

blueberry zucchini bread 

fried zucchini "cakes".  (We had breakfast for dinner one night.)

loaded scrambled eggs and zucchini cakes

jalapeno jelly

volcano pickles

bread and butter pickles

greeny beanies
On pizza night, we had green peppers with dip alongside our pizza.  One pizza was ham, pepper, onion topped.

And one was tomato-basil garlic pizza.

For a reunion on Sunday, I made a veggie pot pie with these veggies, a bunch of cheddar, and the last bit of leftover zucchini soup.  I used yellow and zucchini squash, green beans, collards, onion, tomatoes and garlic for the veggies.

This is it with the top on.  
fresh salsa for the fridge.  (That is wild garlic, by the way, not domestic., hence its teenyness)
(I realize now I forgot to take pictures of the pesto I made and froze...oops.  I also bagged and froze the leftover cilantro.)  

There you have it.  I kicked off my first canning week with a bang and we've been consistently eating like kings this summer.  Matt, my meat and potatoes man, has been a real trooper eating a lot less meat and a lot more veggies these days.

A garden full of goodness is such a gift.

This is so inspiring! :) The food looks absolutely divine! Do you do anything else with cucumbers other than pickle them? I never know what to do with them.

Catie- I just used some cucumbers the other weekend at my parties by making cups out of them (slice them thick and use a melon baller to take out the insides) and then I filled them up with garlic and herb cheese. I've also filled them up with gazpacho. You can use a lot up that way.

Also- it isn't QUITE a pickle, but my family loves them sliced thin and soaked in straight vinegar and black pepper. This, I admit, is an acquired taste but something I grew up with an enjoy.

I also can cinnamon pickles that way- they are not pickles at all, but more a dessert.

I use them for salads and eat them fresh (cut into sticks or disks) with dip. Those are a few ideas. We just brought in the mother load of cucumbers so I think in the next day or two I am going to make a cucumber mask for my face. Just for fun. ;-)

Alyssa- there is no widget to my knowledge. In blogger layout, I added a photo to my sidebar. (I added words to my photo using Picasa.) Then, it gives you the option to have the photo link to something. I linked mine to the search category (gardens). So it takes a bit of work, but not too much. Hope that helps.

Eating like kings, indeed! Every year, I'm surprised anew by how bountifully God provides through gardening. It IS a gift.
