Matt has been busy in the kitchen lately. He made a huge batch of salsa with corn and black beans in it and then I helped him can it. This is the third batch of salsa we have made-and his favorite so far. Still too spicy for me... Posted by Picasa

I just made salsa on Monday (or Tuesday?). It must be good salsa-making weather- here and there!

(Matt looks as pleased as punch. He deserves a clap on the back for helping when you've got a queasy stomach.)

Recipe will be coming up-though I will have to add Matt since he used the recipe as a base and added stuff to it....
I made the first batch of salsa for him, following te recipe meticulously-which involved peeling and seeding the tomatos. After that-I didn't like making salsa. Matt was a bit less patient so he just slices and dices. Peel, seeds, and all. It is much easier and he says it doesn't affect the taste...now THAT I can do!
